Coffee that is grown under tree cover is Bird Friendly or Shade Grown. The shade provides habitats for migratory birds, as well as reducing soil erosion. However, while promoting biodiversity on the farms, this does not necessarily help the small family farmers or estate workers' labour conditions. Organic certification is concerned with growing and processing practices and how they affect the environment and consumers. Certified Fair Trade protects the environment, while directly improving the lives of the millions. The Fair Trade Labeling Organization (FLO) encourages growing according to organic standards, while recognizing certification is too expensive for small farmers. Eco-friendly farming practices are valued and the farms and are prohibited from using the most offensive chemicals.

Conventional prices received by growers do not provide them with a basic living conditions. They presently are below the cost of production. Fair Trade policies guarantee a minimum per pound, (plus an organic premium), even if the New York price is lower. The fair price received by the growers of Fairly Traded coffee is a financial plus. In addition to receiving the Fair Trade price, the growers' cooperatives provide agronomic, commercial, social, educational, medical and infra-structure assistance which the members could not otherwise afford.

There are two major species of coffee, Robusta and Arabica.
Robusta is grown at low altitudes,
under full sun, has almost twice as much caffeine, and is the main ingredient of cheap, flavorless, "blended" commercial coffee available everywhere.
Arabica, grown at high altitudes with abundant rain, warm temps, fertile soil and shade develops superior coffee flavors. Picked by hand only at the peak of ripeness, these arabica beans are meticulously processed and carefully graded and separated by the size and density of the bean. All of the world's great coffees are 100% arabica, but only the top 10% have fine enough flavor to be selected as specialty coffee.

WHAT'S YOUR SIGN?
We arrange adoptions of hard to place dogs and cats with senior citizens. A hard to place pet is older or one that would be euthanized. The animals are complete on veterinary care including spay/neuter prior to placement. We also foster for the senior if they must enter the hospital. When they are well enough to go home their pet goes too. Seniors only pay $25 for the adoption.
